Wagmam chilli ramen sauce

2 scant teaspoons sugar 2 tblsp malt vinegar 3 tblsp bought sweet chilli sauce 5 tblsp fish sauce (nam pla)
Method*
Dissolve the sugar in the vinegar in a small pan over a gentle heat, allow to cool and the combine with other ingredients.

Using sugar as a seasoning is widely practiced in Asia and this sauce is no exception. It brings a real meatiness to dishes and is generally lightly drizzled over food. It will keep for several weeks in the fridge.
