Ingredients190g self-raising flour2 tbs Caster sugar 375 ml Buttermilk 1 tbs Orange zest, grated 1 Egg lightly beaten 1 tbs Butter, melted 1 punnet Blueberries | Method1. Place flour in a bowl, add sugar, buttermilk, egg and butter. Beat with a wooden spoon until batter is smooth.2. Add blueberries and orange zest and stir until combined. 3. Pre-heat a non-stick pan to medium heat. Place a spoon full of batter into the centre of your pan. When bubbles appear flip and cook for 1-2 minutes or until golden brown. |
