Ingredients

6 slices black pudding
1 onion
Garlic
Chopped toms x 2
100g goats cheese
2 aubergines
Tomato puree
Oregano
Bread crumbs
Parmesan

Method

Preheat oven to 180
Fry black puds in frying pan and aubergines on griddle
Create tomato sauce
Put in the oven for half an hour
