Spaghetti Bolognese with ChorizoSubmitted - Ben | |
Ingredients400 glean minced beef2 x 400-gram canschopped tomatoes 1 chorizo 250 mlred wine 150 mlbeef stock 2 tablespoonstomato purée 1 largeonion; (finely chopped) 3 carrots; (finely chopped) 3 stickscelery; (finely chopped) 4 clovesgarlic; (finely chopped) 1 tablespoondried basil 1 tablespoondried oregano 1 teaspoonsalt 1 teaspoonpepper 1 Olive oil Parmesan cheese; (grated) | MethodHeat oil in a pan on a low heat and add the chorizo for a minute or two until the oil turns a red colour then add the onion, carrots and celery and cook for 5 - 10 minutes until soft.Add the lean minced beef and cook until browned. Add chopped tomatoes, wine, beef stock, tomato purée, basil, oregano, salt and pepper. Mix well and simmer gently for 1 hour and a half, stirring occasionally, until excess liquid has reduced. Serve with spaghetti or tagliatelle and a generous sprinkling of Parmesan cheese. |
