Spaghetti Bolognese with Chorizo

400 glean minced beef
2 x 400-gram canschopped tomatoes
1 chorizo
250 mlred wine
150 mlbeef stock
2 tablespoonstomato purée
1 largeonion; (finely chopped)
3 carrots; (finely chopped)
3 stickscelery; (finely chopped)
4 clovesgarlic; (finely chopped)
1 tablespoondried basil
1 tablespoondried oregano
1 teaspoonsalt
1 teaspoonpepper
1 Olive oil
Parmesan cheese; (grated)


Heat oil in a pan on a low heat and add the chorizo for a minute or two until the oil turns a red colour then add the onion, carrots and celery and cook for 5 - 10 minutes until soft.

Add the lean minced beef and cook until browned.

Add chopped tomatoes, wine, beef stock, tomato purée, basil, oregano, salt and pepper.

Mix well and simmer gently for 1 hour and a half, stirring occasionally, until excess liquid has reduced.

Serve with spaghetti or tagliatelle and a generous sprinkling of Parmesan cheese.
