Stilton and cranberry salad with cinnamon dressing

50g dried cranberries
2 tbsp port
450g mixed salad leaves
50g blue Stilton, crumbled
50g flaked almonds, toasted

For the dressing

4 tbsp olive oil
2 tbsp raspberry vinegar
2 tsp sugar
1 tsp ground cinnamon
5-10 drops Tabasco
Salt and pepper


Put the dried cranberries in a small bowl and cover with the port, then set aside while they soak and plump up.

Make the dressing: whisk together the oil, vinegar, sugar, cinnamon, Tabasco, salt and pepper.

Put the leaves into a bowl with the Stilton, almonds, cranberries and dressing, toss gently and serve.
