Thai Green Curry

Ingredients

For the paste:

- Lemongrass
- Shallots
- Oil
- Corriander
- Chillis
- Fish sauce
- Brown sugar
- Ginger
- Lime juice

The rest:

- Prawns, shrimps, chicken, veg....
- Coconut milk
- Lime leaves
- Rice

Optional:

- Galangal
- Sweet potatoes
- Baby aubergines

Method

1. Blitz the paste ingredients

2. Fry the paste for while

3. Add meat and / or veg

4. Add coconut milk and lime leaves

5. Add more fish sauce / sugar if needed

6. Cook until sauce has reduced a little and meat / fish / veg are cooked
