Truck Driver's Dahl Baht

Knob of ghee or splash of sunflower oil
1 large white onion, finely chopped
1 heaped dessert spoon of garam masala
1 level dessert spoon of tumeric
1 teaspoon of cumin
1 teaspoon of chilli powder
3 cloves of garlic
2 inches of root ginger, finely chopped
8 roughly chopped tomataoes (or a tin of chopped tomatoes)
1 bag of red split lentils (I added about 250g)
1 litre of vegetable stock


1. Fry the onion until soft in the ghee or sunflower oil
2. Add all the spices and fry to bring out the flavours
3. Add the garlic, root ginger and tomatoes
4. As the mixture bubbles add the lentils and coat with the mixture
5. Add the vegetable stock
6. Let the dahl simmer but watch that it doesn't catch and burn. Stir frequently and add more liquid if it gets too thick before the lentils are really soft
7. Add salt to taste
8. Add a knob of butter and serve with fresh coriander


Quite hot, reduce the chilli powder for a cooler version
