Will's Spicy Pepper and Tomato Relish

Serves - 3-4


1 red pepper, diced
1 yellow pepper, diced
1 large white onion, chopped
1 clove garlic, minced
300g baby plum tomatoes, halved
1 red chilli, finely chopped
1 dessertspoon brown sugar
1 dessertspoon good red wine vinegar
Half tsp smoked paprika
Half tsp ground cumin
Half tsp fennel seeds
Olive oil
Salt and pepper to taste


Hear the olive oil in a heavy pan over a medium hear and add the chopped onion and diced peppers. Fry at a nice frizzling but not sizzling pace for about 10-15 minutes, stirrig frequently until soft. Add the garlic and chilli at 10 minutes in.

Stir in the spices and sugar and cook them out for a minute or two. Splash in the vinegar and allow to reduce for about a minute.

Add the tomatoes and watch them melt into the mix. Season and give them 10 minutes, stirring occasionally, to release their moisture and get all sweet and rich.

Serve with your favourite burger.
